Seafood Stew

Yield: 6–8 servings

Ingredients

* 2 medium onions, diced
* 2 pounds small red bliss potatoes
* 2 leeks, chopped (use the white and light green portions, stopping where the leaves begin to yellow)
* ⅔ cup olive oil
* 2 pounds clams
* 2 pounds mussels
* 3 earns of corn, halved
* 2 pounds shrimp, shell-on (snip along the back of each shell with kitchen scissors)
* 2 pounds kielbasa, cut into 2-inch pieces
* 2 cups dry white wine

Directions

1. Heat the olive oil in a 16-quart or larger stockpot over high heat.
2. Add the onions and leeks and sauté until the onions are nearly translucent.
3. Without stirring, layer the ingredients in the following order:
 * Potatoes
 * Kielbasa
 * Clams
 * Mussels
4. Pour the white wine over the top. Do not stir.
5. Cover tightly and cook over high heat for 5 minutes.
6. Quickly lift the lid, add the corn and the shrimp, and immediately cover again.
7. Continue cooking over high heat until steam begins escaping around the lid, about 10 minutes.
8. Reduce the heat to medium and cook for 15 minutes without removing the lid.
9. Remove from the heat. Divide the seafood, sausage, and potatoes among serving bowls. Ladle the broth from the bottom of the pot over each serving.

Serve with: A hearty seeded bread for soaking up the broth.
