Ingredients (Serves 5–6)

* 8 oz short pasta (penne, shells, or rigatoni)
* 2 beef sausages, sliced
* 1½ cups frozen sweet corn (no need to thaw)
* 1 green bell pepper, diced
* 1 shallot, diced
* 3 garlic cloves, minced
* 3 oz cream cheese
* ½ cup half-and-half
* ¾ cup reserved pasta water
* 1 tbsp butter
* ½ tbsp oil
* 1 tsp chicken bouillon powder
* 1 tsp chili powder
* 1 tsp garlic powder
* ½ tsp smoked paprika
* ½ tsp ground cumin
* Juice of ½ lime
* ½ cup Cotija cheese, crumbled
* ¼ cup fresh cilantro, chopped

Instructions

1. Cook the pasta in well-salted water until al dente. Reserve ¾ cup of the pasta water, then drain.
2. Heat the butter and oil in a large skillet over medium heat. Add the shallot and bell pepper and cook for 2–3 minutes until softened.
3. Add the sliced sausage and cook for 3–4 minutes until browned and slightly crispy.
4. Stir in the frozen corn and cook for another 2–3 minutes until lightly golden. Add the garlic and cook for 30–60 seconds.
5. Sprinkle in the chicken bouillon, chili powder, garlic powder, smoked paprika, and cumin. Stir to coat everything evenly.
6. Pour in the half-and-half and reserved pasta water. Bring to a gentle simmer, then reduce the heat and stir in the cream cheese until smooth and creamy.
7. Add the cooked pasta and toss until everything is coated in the sauce.
8. Finish with fresh lime juice, Cotija cheese, and chopped cilantro. Serve with extra Cotija and cilantro on top if desired.
