World Cup Pizzas ⚽️ USA vs Belgium 🇧🇪
 
 Seattle's Lumen Field plays host to the round of 16 matchup tonight as the United States facing Belgium fresh off of their thrilling comeback win against Senegal.
 
 Belgium's pizza is inspired by their national dish, Moules Frites, which translates to mussels and fries. 
 
 The dish starts by sauteeing shallots and garlic in a mix of butter and olive oil followed by white wine and mussels. They steamed for a few minutes until the mussels open and the meat is removed from their shells and set to the side. To build the sauce, I start with a roux then add the strained cooking liquid, reserving the shallots and garlic, cooking til thickened and it's finished with a touch of heavy cream and lemon juice. The pizza starts with my tavern dough that gets an even layer of that sauce, the cooked mussels, the reserved shallots and garlic, and shredded mozzarella. After a quick bake in my @Gozney Arc XL, the pizza is finished with crispy frites, garlic aioli, green onion, and fresh parsley. This might be the most flavorable pizza that I've made in this series and the mix of textures and layers works so so well. It 100% needed to be paired with an ice cold belgium beer. 🍺  Can the US avenge their 2014 World Cup Loss to Belgium and head to punch their ticket to the WC quarterfinals for the first time since 2002?
