Every Mexican family has that side dish that shows up at every cookout. For us, it was always ensalada de coditos. 💛

My version is lightened up with Greek yogurt, loaded with sweet corn, peas, and carrots, and it’s always one of the first bowls to disappear. Hope it finds a spot on your summer table.
