kalejunkie LOWER CARB SAUCY BEEF & ZUCCHINI GOCHUJANG PASTA ☺️ MACROS: 40g protein • 35g carbs • 12g fat I will tell you right now, this is the best pasta you’ll have this entire year and it’s perfect for weeknights and date nights 🥰 I’m using lower carb fettuccine from carbe_diem_foods but you can use any pasta you like! The zucchini adds so much flavor and volume to keep you fuller, longer!⁣

Make 6 servings⁣
⁣
Two zucchinis, chopped⁣
2 tsp cornstarch or tapioca flour + 3tsp water⁣
⁣
Gochujang sauce: ⁣
1 1/4 cups chicken broth ⁣
1/3 cup dark soy sauce (or coconut aminos for gf)⁣
3 tb rice vinegar⁣
1 tb maple syrup⁣
3 tb tomato paste⁣
1 tb freshly grated ginger (I use ginger paste)⁣
1/4 cup gochujang (Korean chili paste)⁣
4 cloves garlic, minced ⁣
⁣
2 lbs lean ground beef (93/7 or 95/5)⁣
6 green onions, finally chopped⁣
12 oz pasta of choice (I’m using carbe_diem_foods fettuccine)⁣

Preheat oven to 425F. Cut zucchini into 1 inch pieces and place them on a baking sheet. Spray very lightly with cooking oil of choice, sprinkle salt and pepper and bake for 16 to 17 minutes flipping once halfway. Next, make the cornstarch/tapioca slurry. Whisk together the cornstarch/tapioca and water and then set aside. After that, cook pasta until al dente according to package instructions. Then make the sauce. Add all of the sauce ingredients to a bowl and whisk until smooth. Finally, cook the ground beef. Lightly spray a large nonstick skillet with oil of choice. Add the ground beef. Use a masher to mash the meat into tiny pieces, and once it is cooked 3/4 of the way through, pour the sauce in, stirring until all the meat is coated. Add in the cornstarch/tapioca slurry, continuing to mix for another minute. Add in the green onions, roasted zucchini, and cooked pasta. Mix everything until coated completely.
