This is one of my favorite meals to make for myself.  This recipe uses a jarred bbq sauce that I doctored up with chipotle but feel free to use whatever bbq sauce you want.  The BBQ Sauce is amazing on fish and chicken as well!  Bibb lettuce is perfect for making lettuce cups because of the shape of the leaves.  It’s makes a perfect vessel for whatever your stuffing them with and are a perfect substitution for tortillas. Simple, healthy, fresh and bright, it’s perfect for a hot day 
Simple make the BBQ shrimp and the salsa and assemble the tacos my stuffing the Bibb leaves with shrimp. Salsa and avocado slices

Chipotle BBQ Shrimp Tacos

6 firm, ripe peaches
1/2 cup chopped red onion 
2 tsp olive oil
1/2 cup diced cucumber 
1 clove garlic, minced
1-2 chipotle peppers, canned in adobo sauce, seeded and chopped 
1 small jalapeño seeded and diced 
1/4 cup chopped cilantro
Juice of 1 lime
1 tbls honey, optional 
Salt and pepper to taste 

Preheat the grill to medium. Cut each peach into thick slices and toss with a little olive oil.  Place the peaches on the grill. Grill the peaches 1-2 minutes per side until nice grill marks have formed, but the peaches are still firm. Remove From grill and let cool down.  Chop the peaches and add to a bowl. Add the chipotle peppers along with the minced garlic, cilantro, the lime juice and honey. Season to taste with salt and pepper. Let sit at room temp for 30 minutes so all the flavors can marry 

BBQ Sauce 
1 1/2 cup BBQ Sauce 
1/3 cup orange juice
2 tbls honey
1 1/2 tsp finely chopped chipotles in adobo
1/2 tsp ancho chili powder

1 1/2 lbs peeled and deveined shrimp

In a medium bowl, whisk together barbecue sauce, orange juice, honey, chipotles, and ancho chili powder. Toss the sauce with 1 1/2 pounds of  peeled, deveined shrimp, stir and let marinate for 15 minutes. Thread onto skewers and then grill on medium-high heat for 2-3 minutes per side.
