Ingredients

450g ripe peaches 

50g (¼ cup) granulated sugar

25g (2 tbsp) light brown sugar

1 tbsp lemon juice

½ tsp vanilla extract

½ tsp ground cinnamon

⅛ tsp ground nutmeg

⅛ tsp kosher salt

1 tbsp cornstarch

15g (1 tbsp) unsalted butter, cut into small pieces

Biscuit Topping

Ingredients

125g (1 cup) all-purpose flour

25g (2 tbsp) granulated sugar

1 tsp baking powder

¼ tsp baking soda

¼ tsp kosher salt

42g (3 tbsp) cold unsalted butter, cubed

90ml (6 tbsp) buttermilk

½ tsp vanilla extract

For finishing:

½ tbsp melted butter

1 tbsp coarse sugar or granulated sugar
