Ingredients

2 medium eggplants (about 700–800g)

2 medium Yukon Gold potatoes

2 tbsp olive oil

Salt

Meat Sauce

500g (1 lb) ground lamb (or half lamb, half beef)

1 tbsp olive oil

1 medium onion, finely diced

3 cloves garlic, minced

2 tbsp tomato paste

400g canned crushed tomatoes

60ml (¼ cup) dry red wine

1 tsp ground cinnamon

¼ tsp ground allspice

1 bay leaf

1 tsp dried oregano

½ tsp black pepper

1 tsp kosher salt

Béchamel

60g (¼ cup) butter

60g (½ cup) all-purpose flour

500ml (2 cups) whole milk, warmed

¼ tsp freshly grated nutmeg

60g (¾ cup) finely grated Parmesan or Kefalotyri

1 egg yolk

½ tsp salt

Topping

30g grated Parmesan
