The healthy protein AND fiber packed dinner we’ve had on repeat! I really don’t think weeknight dinners get any better than this. Less than 20 minutes and dinner is on the table for the whole family 🤌🏼 Jonah has plain salmon with rice and avocado on the side. Tons of healthy fats and he devours it! Hope you love this one!

Serves: 4
Total Time: 20 minutes

Ingredients:
For the salmon:
1 ½ pounds boneless skinless salmon, cut into 1½ inch cubes
¾ cup Trader Joe’s Soyaki Sauce or teriyaki sauce of choice

For the avocado-edamame salad:
1 1/2 cups shelled edamame
2 ripe avocados, diced
2 Persian cucumbers, diced
3 green onions, thinly sliced

Dressing:
2 tablespoons reduced sodium soy sauce
1 tablespoon toasted sesame oil
1 tablespoon rice wine vinegar
1 teaspoon honey

For serving:
4 cups steamed rice
Extra sesame seeds, green onions, soy sauce or sriracha (optional)

Instructions:
Place the salmon cubes in a bowl or zip-top bag and pour over the Soyaki sauce. Marinate for 15 minutes (or up to 2 hours in the refrigerator) while you make the salad.
Preheat your air fryer to 400 degrees or regular oven to broil. 
Arrange the salmon in a single layer, allowing any excess marinade to drip off, in the parchment lined air fryer basket (you can work in batches if needed). Air fry for about 10 minutes, until the salmon is cooked through and lightly caramelized around the edges. For broiling in the oven, arrange the salmon on a parchment lined baking sheet and broil on the top rack for 7-10 minutes, checking frequently to avoid burning. 
While the salmon cooks, make the salad. In a medium bowl, combine the edamame, avocado, cucumber, and green onions.
In a small bowl, whisk together the soy sauce, sesame oil, rice wine vinegar, and honey. Pour over the salad and gently toss to combine.
To serve, divide the rice among 4 bowls. Top with the salmon and avocado edamame salad. Sprinkle with sesame seeds and additional green onions and a drizzle of soy sauce if desired.
