A classic mojito gets a tropical coconut twist for National Mojito Day. 🌿🥥 This ocean-inspired mojito riff is perfect for a summer evening. Made with Kōloa Kaua‘i Coconut Rum, it gets its vibrant blue color naturally from blue spirulina.

Blue Coconut Mojito

Ingredients:
(makes one serving)
• Pinch of blue spirulina
• Barspoon of water
• 10 fresh mint leaves
• 1-2 cubes raw sugar
• 2 oz. Kōloa Kaua‘i Coconut Rum
• 1 oz fresh-squeezed lime juice
• Club soda
• Mint sprig for garnish

Directions:
Dissolve the blue spirulina in water and stir well. Add the mint and sugar and muddle lightly. Fill the glass with ice, pour in the rum and lime juice, top with club soda, and garnish with mint.
