My first week cooking in Mauritius and I’m already obsessed! 🇲🇺 Cooking my way through the island’s incredible food while trying to pick up some Mauritian Creole along the way. Please go easy on my pronunciation in the video, I’m really trying! 😂

INGREDIENTS
 1 medium onion, finely chopped
 10 fresh curry leaves
 1 tbsp coriander stalks, finely chopped
 Pinch of Panch Phoron (Indian 5-spice blend)
 1 tsp garlic ginger paste
 2 tbsp Mauritian curry powder mixed with 100ml water
 1 tomato, finely chopped
 2 potatoes, cut into small cubes
 1x 400g tin White Beans, drained and washed
 Salt to taste
 Fresh coriander leaves (cotomili) to garnish

🍳 QUICK STEPS
1. Heat a splash of oil and fry the onion, curry leaves, coriander stalks, and Panch Phoron until fragrant. Stir in the ginger-garlic paste for 1 minute.
2. Mix your curry powder with 100ml water to form a smooth paste. Pour into the pot and cook for 2 minutes until the oil starts to separate.
3. Add the chopped tomato and cubed potatoes. Coat them well in the spice paste and let them soften for 3–5 minutes.
4. Toss in your beans and add just enough water to create a gravy (about 1 cup).
5. Simmer on low heat for 15 minutes until the potatoes are tender and the sauce is thick and creamy.
6. Season with salt, garnish with fresh cotomili, and serve with hot roti or rice! Tou korek!
