Made this for Mia after swim practice today & it hit the spot.

Viral One-Pot Mac & Cheese

Ingredients

* 3 tablespoons salted butter
* 3 cloves garlic, minced
* 1 (16 oz) box medium shell pasta
* About 4 cups chicken broth (just enough to barely cover the pasta)
* 1 (12 oz) can evaporated milk
* 2 cups sharp cheddar cheese, shredded
* 2 cups mild cheddar cheese, shredded (or substitute Colby Jack, Monterey Jack, Gouda, or another favorite melting cheese)
* 1 cup freshly grated Parmesan cheese
* ½–1 cup shredded mozzarella (optional)
* Salt and freshly ground black pepper, to taste

Instructions

1. Melt the butter in a 12-inch skillet over medium heat.
2. Add the minced garlic and cook for about 1 minute, just until fragrant.
3. Add the dry shell pasta and stir for another minute to lightly toast it.
4. Pour in the chicken broth, using just enough to barely cover the pasta. Bring to a gentle boil.
5. Cook for about 4–6 minutes, stirring occasionally, until the pasta is just shy of al dente and most of the broth has been absorbed.
6. Reduce the heat to low and stir in the evaporated milk.
7. Add the sharp cheddar, mild cheddar, and Parmesan a handful at a time, stirring until smooth and creamy before adding more cheese.
8. Continue stirring for another minute or two, until the pasta is perfectly tender and the sauce is thick, silky, and coats every shell.
9. Stir in the mozzarella, if using, and season with salt and pepper to taste.

Tips

* The secret is not adding too much broth. The liquid should barely cover the pasta when you start cooking. Too much broth will make the sauce thin.
* A 12-inch skillet works great, though a slightly smaller pan also works. The pan should be large enough for the pasta to cook evenly without spreading the liquid too thin.
* Feel free to swap in your favorite melting cheeses. Aim for about 5 cups of cheese total for an extra creamy, restaurant-style mac & cheese.
