Cake. 😍 Ingredients: - Cooking spray - 2 1/2 cups (about 5 oz.) vanilla wafers, divided - 2 1/2 cups (about 10 5/8 oz.) all-purpose flour - 1 tsp. baking powder - 1 tsp. baking soda - 1 1/4 tsp. kosher salt, divided - 1 cup granulated sugar - 1/2 cup packed light brown sugar - 7 Tbsp. unsalted butter, softened and divided - 3 large eggs - 1 1/2 cups mashed bananas (from about 3 large bananas), plus banana slices for garnish - 2 tsp. vanilla extract, divided - 1 1/2 cups whole buttermilk - 1 (3-oz.) pkg. cook-and-serve vanilla pudding and pie filling mix - 2 cups whole milk - 2 cups heavy whipping cream - 1/3 cup powdered sugar Directions: 1. Preheat oven to 350°F. Coat a 13- x 9-inch baking pan with cooking spray. Line pan with parchment paper, leaving a slight overhang on long sides. 2. Place 2 cups (4 ounces) of the vanilla wafers in a large zip-top plastic bag. Using a rolling pin, crush into fine crumbs to make about 1 cup crumbs. Reserve remaining 1 cup vanilla wafers for garnish. Whisk together vanilla wafer crumbs, flour, baking powder, baking soda, and 3/4 teaspoon of the salt in a medium bowl. 3. Beat together granulated sugar, brown sugar, and 6 tablespoons of the butter in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add eggs, 1 at a time, beating on medium speed after each addition just until incorporated. Beat in mashed bananas and 1 teaspoon of the vanilla until combined. 4. Reduce mixer speed to low. Add flour mixture and buttermilk alternately in 3 additions, beginning and ending with flour mixture, beating just until combined after each addition. Spread batter evenly in prepared pan. 5. Bake in preheated oven until a wooden pick inserted in center comes out clean, 35 to 40 minutes. Let cool completely in pan on a wire rack, about 1 hour. 6. Whisk together pudding mix, milk, and 1/4 teaspoon of the salt in a medium saucepan until smooth. Cook over medium, whisking constantly, until mixture comes to a boil and thickens, about 5 minutes. Boil, whisking constantly, 1 minute. Remove from heat, and stir in remaining 1 tablespoon butter. 7. Immediately spread pudding evenly over cooled cake. Let cool to room temperature, about 30 minutes. Chill until set, about 1 hour. 8. Beat cream, powdered sugar, and remaining 1 teaspoon vanilla and 1/4 teaspoon salt in a medium bowl with an electric mixer on medium-high speed until stiff peaks form, 2 to 3 minutes.
