A quick and easy pasta salad that’s light and refreshing! Girelle pasta tossed with lemon vinaigrette, arugula, Parmigiano, burrata, pistachio and basil pesto 🍋☀️

Ingredients:

1/2 lb. girelle pasta
1/2 cup extra virgin olive oil
Juice of 2 lemons
Salt & pepper to taste
1-2 cups arugula
1 cup Parmigiano Reggiano, grated
8 oz. burrata
1/4 cup pistachios, chopped 
Basil pesto to taste
