earl grey salt baked asian pears
This technique may seem strange at first, but trust me when I say this time honored style of baking food will knock your socks off. It’s common knowledge at this point that salt added to fruit enhances sweetness, reduce bitterness, and amplifies flavor to the max. Salt baking is one of my favorite ways to prepare thick skinned fruits, vegetables, starches, etc.
*and YES, using my method below you CAN AND SHOULD keep the salt after baking. It’s still perfectly usable and still very flavorful. NO, the salt won’t taste like pears after you’ve baked it. NO, your pears won’t taste like a salt mine, they’ll just be the most tender, perfect, and scrumptious pears you’ve ever had.

Ingredients
5-6 asian pears (often also called sand pears)
2-3 cups kosher salt (you may need more or less depending on the size of your container)
3 tbsp earl grey tea
3 tbsp coriander seeds
1 tbsp fresh thyme leaves

Process
Preheat the oven to 350F. Arrange pears upright in a container of your choosing. Make sure the container is deep enough to fully submerge pears in salt. Mix together the salt, earl grey, coriander, and thyme leaves. Cover pears with salt mixture, allowing just the very top and stems to stick out. Bake until pears are tender when pricked with a fork, around 90 minutes.

While the pears cook, you can make your caramel, whipped cream, custard, etc to accompany your pears. I made a saffron infused créme anglaise because saffron and pears go together so well. But feel free to keep it simple and eat the salt baked pears on their own. Just make sure you keep some bits of salt on the outside of the pear, as the bits of salt SING next to the tender texture of the fruit.
