FAR BRETON
2 1/3 cups (260g) all-purpose flour
2 tbsp salted butter, melted (30g) + more for coating baking dish
1 tsp vanilla
5 eggs
1 cup superfine (caster) sugar
4 cups milk (plant-based also works)
1 lemon, zest only
1 tsp kosher salt
1/4 cup orange juice
1 cup chopped prunes, soaked in orange juice for at least an hour (preferably overnight)

Process:
Preheat the oven to 425. Generously grease oven-proof dish or cast iron pan of your choice.
To prepare prunes: Soak chopped prunes in orange juice for at least an hour (feel free to also use citrus zest or rum) Strain mixture and set soaked prunes aside.
— —
To prepare batter: Put flour, melted butter, vanilla, eggs, sugar, milk, lemon zest, and salt in a blender. Blend until smooth and thoroughly mixed. Strain mixture and set aside. (you could also do this process with a whisk) Batter should be thin. Place soaked prunes in the bottom of your baking dish(es) and pour far breton batter on too of prunes, filling up the entire dish. (the far breton will rise a bit in the oven, but only if you feel the dish to the very top)
— —
Bake for 20 minutes at 425F, and then WITHOUT opening the oven, turn down the temp to 350F for another 20 minutes until golden brown on top. I like to top mine with cold cream and brandied cherries while it’s still hot, but you could also let this cool and enjoy it with absolutely anything at all! #FarBreton #apartmentmiso #dessert
