Scorched Green Beans with Madame Jeanette Pepper Fried Peanuts and Powdered Lime Butter

For the Fried Peanuts
1 1/2 cups neutral oil (I used algae oil)
1 1/2 cup raw peanuts
3 madame jeanette peppers (habanero could work too)
1 tsp aleppo pepper flakes
1 tsp kosher salt
Cover the raw peanuts in water and soak for about 15 minutes,then drain and dry VERY well. In a large skillet, over medium heat add the oil and peppers to the pan, let cook for 1-2 minutes. Then add the peanuts and Aleppo flakes. Cook the peanuts over medium heat until they’re golden brown. Strain peanuts and add salt, set aside (save the flavored neutral oil for cooking, dressings, sauces, etc) Store leftover peanuts in an airtight container to keep from getting stale

For the Powdered Lime Butter
1/2 cup powdered butter (or nutritional yeast)
Lime zest of 2 limes
1/2 tsp kosher salt
Whisk together all ingredients (using your fingers to press the lime zest into the powdered butter or nutritional yeast helps with really infusing that flavor)

For the Scorched Green Beans
2 lbs green beans, trimmed
1/4 cup coconut aminos, separated
green onions, thinly sliced (white and green)
Salt and pepper to taste
In that same skillet over high heat, add a few tbsp of the infused peanut oil to the pan. Add half of your green beans (don’t add too many, as you want them to get nice an scorched. Let them cook for 2-3 minutes. Then add half of the coconut aminos to the pan, and one tablespoon of water. Place a lid on the pan to allow beans to steam cook for a minute.Take off lid, and stir green beans. Moving the beans around will help with ensuring they get scorched on every side. You can also use a lid or bowl to press down on the beans to ensure more scorching. They’re finished when they’re scorched on at least one side, and cooked through. To plate green beans, top with a generous portion of peanuts and powdered lime butter. I like to also microplane some of the peanuts onto of the green beans to get the most out of that peanut/pepper flavor! #apartmentmiso #greenbeans #peanuts #peppers
