If you haven’t salt baked pears yet, then you really haven’t experienced all the goods that pears truly have to offer. Salt baking acts as insulation and contributes to even and super gentle cooking, while also creating flavor that’ll knock your socks off. Ive said before how much I love passive styles of cooking, and this one is perhaps my favorite for just how much flavor you’re able to pull out of a single ingredient. Oh, and for all those who will ask..YES, you can reuse the salt! NO, the salt won’t taste like pears after you’ve baked it. YES, you can cook many things this way. NO, your pears won’t taste like a salt mine, they’ll just be tender, perfect, and scrumptious.

Salt Baked Pears
* 6 firm but ripe pears
* 1-2 pounds kosher salt (how much salt you need really depends on the size/depth of the container you’re roasting the pears in)
Coconut Caramel Sauce
* 1 can full-fat coconut milk
* 1/4 cup butter
* 1 tsp vanilla extract
* 1/2 cup coconut sugar
* 2 tbsp maple syrup
* 1/2 tsp kosher salt

Preheat oven to 350 degrees. Arrange the pears upright in a container of your choosing. Make sure that the container is deep enough to fully submerge your pears in salt. Cover pears with salt, allowing just the very top and stems to stick out. Bake until pears are tender when pricked with a fork, around 90 minutes. While the pears cook, you can make your caramel. Add all ingredients to a pot on low. Allow mixture to cook down/reduce for 20-30 minutes until an emulsified caramel starts to form. The longer you cook this, the thicker and darker and richer the flavor. Be sure to keep the pan on low. The caramel will thicken even more as it starts to cool. Use immediately or save in airtight container in the refrigerator. When finished, carefully remove the pears from the salt, allowing some salt to still stick to the sides for maximum flavor. *Save the baked salt in a container for later use. I served these whole and cut in quarters with a coconut caramel, whipped cream, orange zest, and a few pinches of nutmeg (because I’m a hoe for nutmeg) and they were INSANELY good! #saltbaked #pears #apartmentmiso #caramel
