Grissini and friends

you ever see something and think, I’d like to make that a breadstick? well I did that yesterday and it felt really good. pretty recently i discovered that my sole purpose was to combine things with other things, and then swallow them up, ya know sorta like the ocean. luiny and sophieloujacobson inspired me, so I made these grissini breadsticks, and then I swallowed them up. it’s my hope that you will, too.

Grissini breadsticks
475g all-purpose (or whole wheat flour is you have access to some)
260g warm water
10g kosher salt
10g maple syrup (or sugar) 4 g yeast 55g olive oil + more for brushing 1/4 cup semolina or corn flour for dusting
1/4 cup poppy seeds
1/4 cup white sesame seeds

Process
In a large bowl add warm water, yeast, and maple syrup Allow yeast to bloom for 5 minutes, until frothy. Then add flour and salt and mix until the dough comes together. Then add olive oil and knead for 10 minutes either by hand or with a stand mixer with a dough hook. The dough should be sticky, but soft. Cover the dough in a well oiled bowl for about 30 minutes. While you wait, add the semolina flour, poppy seeds, white sesame seeds, and 1/4 cup olive oil to a bowl with a few pinches of salt. Set aside. After dough as rested, using a scale, cut off pieces of dough that weigh 30 grams. Roll the dough into little logs and set aside (don’t worry if you can roll the logs out super skinny and long yet, just roll them as thin as you can and let them rest. As they rest, they’ll become more pliable. Roll the dough into logs as thin as possible, without breaking them. You can also twist the dough for a fun twisting effect. Place them on a prepared baking sheet. Don’t worry if they’re not perfect, grossing isn’t supposed to be. Brush them with the olive oil/seed mixture. You can also add more seeds by hand if you want. Let rest at room temperature covered with plastic wrap or towel for 30 minutes. Bake them at 400 degrees for about 20-25 minutes. They’re meant to be well done and VERY crispy. SO if they need more time in the oven, that’s okay too. #grissini #havingfun
