## Caption

One Pan Orzo and Veggie bake.  Don’t mind if I do.  This dish combines orzo with lots of veggies and cheese all baked up to ooey gooey deliciousness.  The great thing about this dish is how versatile it is.  You can really add any veggies that you have on hand and feel free to switch up the cheese as well!
I made it today with chopped cooked chicken and chicken broth, but it can easily be made vegetarian by omitting the chicken and using vegetable broth instead.  Cozy and delicious, it’s a quick and easy weeknight meal

Orzo, Zucchini, Artichoke, Chicken, Spinach Bake

1 lb box of Orzo pasta 
1 1/2 cup cherry tomatoes 
1 small onion, diced 
3 cloves garlic, chopped 
2 zucchinis, sliced 
1 (12oz bag) frozen artichoke hearts, thawed or use 1 (15oz) can drained artichoke hearts
3 tbsp olive oil 
1 teaspoon chili flakes 
2 tbls fresh thyme leaves 
2 tsp dried oregano 
1 tsp salt  and 1/2 tsp pepper
4 cups chicken  broth 
2 large handfuls of spinach 
3 cups cooked and cubed chicken meat 
½ cup parmesan cheese, grated 
1 ½ cups shredded mozzarella cheese 

Preheat oven to 400F degrees. Add artichokes, tomatoes, onion, zucchini and garlic to a 13x9” baking dish. Season with  salt, pepper, thyme, oregano, chili flakes and drizzle the olive oil over top mixing together until veggies are evenly coated. Bake in oven for 20 minutes.
Remove from oven and add in the orzo, chicken and broth and mix well.  Place dish back into the oven for 20 minutes.  Remove baking dish and add in spinach and mix together and bake for 5 more minutes.  Remove from oven, top with mozzarella and Parmesan and bake for 10 minutes or until cheese is melted.
I like to stick it under the broiler for 2-5 minutes until cheese is bubbly and golden.
