Growing up, baked beans on toast was the ultimate low-effort, high-reward meal. But once you temper those beans with warm ghee, fresh curry leaves, and a kick of green chili? It becomes absolute magic. Cover it in a blanket of gooey, melted cheese, and you’ve got a masterpiece.

Masala Baked Beans on Toast

1 can (400g) Baked Beans in tomato sauce
1 thick slice of your favorite bread (sourdough or brioche work beautifully!)
1 small onion, finely diced
2-3 garlic cloves, cut into thin slivers
1-2 green chilies, finely chopped (adjust to your heat preference!)
A sprig of fresh curry leaves (stem removed)
1 tbsp ghee (or butter/oil)
½ tsp mustard seeds
Handful of grated cheese (cheddar or mozzarella for that epic cheese pull!)
Fresh coriander, chopped (for topping)
The Ground Spices:
½ tsp turmeric powder
½ tsp Kashmiri red chili powder
½ tsp cumin powder
½ tsp garam masala

Prep: Dice your onions, sliver your garlic, chop the chilies, and strip the curry leaves.
2. Temper: Melt ghee in a pan over medium heat. Add the mustard seeds and let them pop.
3. Sauté: Add the onions, garlic, green chilies, and curry leaves. Sauté for 2 minutes until the onions are soft and the garlic is fragrant.
4. Spice & Simmer: Stir in the ground spices for 30 seconds, then pour in the can of baked beans. Let them simmer and thicken in the spiced sauce for 3–4 minutes on low heat.
5. Toast: In a separate pan, toast your bread with a little butter or ghee until golden and crunchy.
6. The Melt: Spoon the hot masala beans over your toast. Top generously with grated cheese and fresh coriander. Cover with a lid for 1 minute until the cheese is completely melted and gooey.
7. Serve: Slice, capture that cheese pull, and dig in!
