Every animal in our Sushi Zoo begins with perfectly prepared rice, seasoned with our signature Zoo: a carefully balanced blend of Japanese rice vinegar, sugar, salt, and kombu that gives sushi rice its sweetness, acidity, seasoning, and signature glossy texture.

Traditional chefs call it sushi-zu. At Ethos, we call it Sushi Zoo because our rice has officially gone wild. 😂
