Taquitos are my jam. They are so easy to make and can be filled with infinite filling possibilities. They can also be frozen and stored in your freezer for a later day. 
Today’s version is super simple and straightforward. Breakfast sausage (just cook them according to the directions on the package), scrambled eggs and shredded cheese all wrapped in a tortilla and baked until crispy. I added fresh corn and scallions to the eggs but often add mushrooms, onions, peppers, spinach and tomatoes. Really anything goes. I also use the tiny 6” tortillas

Wrap them up, drizzle with olive oil and bake in 425F for 10-15 minutes or until just golden brown. I like to serve them with salsa and guacamole 🥑
