## Caption

Elote is a Mexican corn on the cob that’s slathered with a sour cream/mayo sauce and then rolled in cotija cheese. It’s my favorite side to get when I go to my favorite local taco joint. 
This Mexican street corn salad is the potluck/picnic version of that. 
It has just the right balance of smoky, spicy, and tangy flavors and can be served warm, cold or room temp.
It consists of corn kernels and vegetables tossed in a creamy lime dressing, then topped with cotjita or feta cheese. It is the perfect accompaniment to chicken, steak or fish and makes a slam dunk side dish your weekend picnic!

Chili Pan-Seared Salmon with Mexican Street Corn Salad

6 cups frozen corn
2 tbsp olive oil
1 red bell pepper chopped 
1/2 small red onion finely chopped
1/2 cup fresh cilantro chopped
5 scallions  chopped
1 jalapeno pepper diced 

Dressing:
Juice of 1 large lime 
1 tsp cumin 
1/8 tsp cayenne 
1 tsp smoked paprika
1/2 tsp black pepper 
1/2 tsp salt
3 tbsp or plain Greek yogurt 
3 tbsp mayonnaise
Mix all until smooth and combined. .
1 cup cotija or feta cheese crumbled for top

Heat the olive oil in a large skillet over high heat. Add the frozen corn kernels and allow to char  for about 5 minutes. Resist the urge to move it around the pan. The corn won’t caramelize if you do. 
Transfer the corn to a large bowl, add the remaining ingredients and stir everything together until well combined. Add the dressing and adjust the lime juice and salt and pepper
