Ingredients:

Meat

1.3 lb beef chuck roast
1 lb oxtail
1 tsp kosher salt
½ tsp freshly ground black pepper
Chiles

3 dried guajillo chiles
2 dried ancho chiles
1 dried California chile
2 dried arbor chile
Vegetables

½ medium white onion
5 garlic cloves
1 Roma tomato
Whole Spices

1 tsp Mexican oregano
½ tsp cumin seeds
½ tsp coriander seeds
½ tsp black peppercorns
3 whole cloves
½ small Mexican cinnamon stick
1 bay leaf
Braising Liquid

12 oz Athletic Brewing NA IPA or Golden
2 cups beef stock
¼ cup apple cider vinegar
To Serve

6 corn tortillas
About 4 oz Oaxaca cheese, shredded
Finely diced white onion
Chopped cilantro
Lime wedges
