Citrus Salmon Bowl
2635 KJ / 630 CAL PER SERVE - SERVES 2

Ingredients:
- Salt and freshly ground black pepper
- 2 x 140 g  salmon fillets, pin-boned
- 50 g  kale ribbons (stalks removed, leaves sliced)
- 90 g baby spinach leaves
- ½ avocado
- ½ large ruby red grapefruit, peeled and sliced
- 1 large orange, peeled and sliced
- 1 blood orange, peeled and sliced
- 1 tbsp extra virgin olive oil
- 1 x 250g packet 90-second microwave black rice
- 3 tbsp chopped coriander leaves
- 1 tbsp pumpkin seeds 

Marinade:
- 1 tsp extra virgin olive oil
- 1  tsp smoked paprika
- 1  tsp ground cumin
- ½  tsp cayenne pepper
- ½  tsp garlic powder
- ½ lime, zested

Dressing:
- 3 tbsp extra virgin olive oil
- 2 tbsp blood orange juice (about ½ blood orange)
- 1 tsp lime juice
- 1 tsp Dijon mustard
- 2 tsp rice malt syrup

INSTRUCTIONS:
1. Place the marinade ingredients in a bowl and mix well. Add a large pinch of salt and pepper and the salmon, then rub the marinade into the flesh. Set aside.
2. Start to assemble the salad by arranging the kale, spinach, avocado, grapefruit, and oranges in two bowls.
3. If you're having the dressing, make it now by combining the olive oil, blood orange and lime juice, mustard, and rice malt syrup in a jar or jug, and mixing well.
4. Heat the olive oil in a frying pan over medium heat. Add the salmon and pan-fry for 4 minutes, or until you can see it has cooked part way up the side of the fillet. Turn and cook the other side for 2–3 minutes, or until the salmon is cooked to your liking (we like ours just opaque).
5. If having, microwave the black rice according to the packet instructions while the salmon is cooking. Set aside to cool for a few minutes.
6. Add the rice and salmon to the bowls and sprinkle the coriander and pumpkin seeds over the top. Serve with the dressing. Enjoy!
