✨Day 1 of our - 30 Days of Summer ✨
We spent the afternoon blackberry picking before heading home to bake these Apple & Blackberry Crumble Muffins together.
One thing I’ve learnt over the years is that children don’t need extraordinary days every day. They remember the little traditions. The recipes they helped stir. The walks where their fingers turned purple from picking blackberries. The conversations that happened while waiting for muffins to bake.
That’s exactly what this series is about.
Thirty simple ideas to help us make the most of the summer holidays together.

🍎Apple & Blackberry Crumble Muffins 🍎 

300g plain flour
1 tbsp baking powder
Pinch of salt
190g caster sugar
210ml milk
1 large egg
100g butter, melted
2 apples, grated
200g blackberries

Crumble topping
15g butter, softened
25g plain flour
15g light brown sugar
1tbsp oats

Method
Preheat the oven to 180°C fan (200°C conventional) and line a 12-hole muffin tin.
Whisk together the milk, egg and melted butter.
Mix the flour, baking powder, salt and caster sugar into the wet ingredients and gently fold until just combined.
Stir through the grated apples and blackberries.
Divide the mixture between the muffin cases.

Rub together the softened butter, flour and brown sugar until you have a crumble texture, then sprinkle in the oats, sprinkle generously over each muffin.
Bake for 22minutes, until golden and a skewer comes out clean.
Leave to cool slightly before enjoying warm.
