I love Baked Chicken Taquitos during a busy weeknight because I’m not dealing with the mess of frying them one by one 🤷‍♀️ Just fill, roll, spray with a little oil and throw them all in the oven! These taquitos are easy, crispy, cheesy, and so good.

Ingredients

• 1½ lbs boneless, skinless chicken breast
• 1 packet taco seasoning, divided
• 1–2 tbsp oil
• ⅓ cup sour cream
• 2 cups shredded Colby Jack cheese
• 20–22 small corn tortillas
• Cooking spray

For serving:
• Guacamole
• Pico de gallo
• Sour cream
• Cotija cheese
• Fresh cilantro

Instructions

1. Preheat the oven to 400°F and line a baking sheet with foil.
2. Drizzle the chicken with oil and season both sides with half of the taco seasoning.
3. Heat a skillet over medium heat and cook the chicken until cooked through and the internal temperature reaches 165°F. Remove from the skillet and shred.
4. Add the shredded chicken back to the skillet along with the remaining taco seasoning and ⅓ cup sour cream. Mix until everything is creamy and well combined, then remove from the heat and let cool slightly.
5. Stir in 2 cups of shredded Colby Jack cheese.
6. Wrap the corn tortillas in a damp paper towel and microwave for 30–45 seconds, or until warm and pliable. Keep them covered while assembling so they don’t crack.
7. Add a heaping tablespoon of the chicken filling to each tortilla. Roll tightly and place seam-side down on the prepared baking sheet.
8. Lightly spray the taquitos with cooking spray.
9. Bake for 20–22 minutes, until the edges are golden and crispy. For a little extra crispiness, broil for the last 1–2 minutes.
10. Serve warm with guacamole, pico de gallo, sour cream, Cotija cheese and fresh cilantro.
