Steak with Parmesan Mashed Potatoes & Garlic Wine Sauce

Ingredients

Steak

* 2 ribeye steaks (about 1 lb each)
* Flaky salt, to taste
* Black pepper, to taste
* 1–2 tbsp avocado oil

Parmesan Mashed Potatoes

* 2 lbs Yukon Gold potatoes, peeled and cut into chunks
* 1/2 cup heavy cream
* 6 tbsp butter
* 3/4–1 cup freshly grated Parmesan cheese
* Salt, to taste

Garlic Wine Sauce

* 5 garlic cloves, minced
* 3/4 cup dry white wine
* 1/2 cup heavy cream (or up to 3/4 cup for an extra creamy sauce)
* 1 1/2 tsp Dijon mustard
* Salt and black pepper, to taste
* Fresh parsley, chopped

Instructions

1. Remove steak from the refrigerator. Meanwhile, bring a large pot of salted water to a boil. Add the potatoes and cook until fork tender, about 15–20 minutes. Drain well.
2. Mash the potatoes with the heavy cream, butter, Parmesan cheese, and salt until smooth and creamy. Cover to keep warm.
3. Pat the ribeye steaks dry, then generously season both sides with flaky salt and black pepper.
4. Heat a cast-iron skillet over medium-high heat. Add the avocado oil. Once hot, add the steaks and cook to your preferred doneness, flipping once. (For steaks about 1 inch thick, cook 3–4 minutes per side for medium-rare.) Transfer to a cutting board and let rest for 5–10 minutes.
5. Reduce the heat to medium. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
6. Pour in the white wine, scraping up any browned bits from the bottom of the pan. Simmer for 2–3 minutes.
7. Stir in the heavy cream and Dijon mustard. Season with salt and black pepper, then let the sauce gently simmer for 3–5 minutes, or until it thickens. Stir in the chopped parsley.
8. Slice the steaks and serve over the Parmesan mashed potatoes. Spoon the garlic wine sauce over the top and enjoy!

Serves 4 when the steaks are sliced to share, or 2 for larger portions.
