The marinade doubles as the sauce which is a huge game changer, saving you time, and zucchini is in peak season right now and it roasts in the oven while the rest of the meal cooks. Like really excited. ⁣ ⁣ Makes 4 servings ⁣ 1 1/2 lbs flank steak (or skirt steak)⁣ 3 tb white miso⁣ 1/4 cup tahini⁣ 3 tb rice vinegar⁣ 3 tb low sodium soy sauce⁣ 2 tb maple syrup ⁣ 1 tb fresh chopped ginger (im using a ginger paste)⁣ 1 large shallot ⁣ 1/2 tsp ground black pepper⁣ ⁣ 3 large zucchini⁣ Avocado oil spray ⁣ S&P⁣ ⁣ Serve with: ⁣ 2 cups cooked jasmine rice⁣ pickled onions⁣ (optional) ⁣ Instructions: Preheat oven to 400F. Make the marinade. Whisk together the marinade ingredients in a large bowl. Pour 1/2 the mixture on top of the steak, coating it well. Reserve the rest for later. Cut the zucchini into small pieces 1/4” thick and spread the pieces onto on a large baking sheet. Spray lightly with avocado oil spray and sprinkle with salt and pepper. Toss with your hands and bake for 15-16 minutes. Remove the pan from the oven, toss and set aside. Next, make the steak. Spray a large nonstick skillet with avocado oil spray, over medium-high heat. Wait for the pan to get extremely hot. Once the pan is hot, add the steak. You might need to work in batches depending on the size of your steak. Do not touch or disturb the steak for 3 to 4 minutes before flipping to the other side. Let cook for another three minutes, undisturbed, then transfer to a cutting board to rest for 5 min before slicing. Note: I like my steak medium-rare, so just cook it longer if you like yours more well done. Finally, assemble bowls—cooked rice, steak, zucchini, and pickled onions (if using).
