kalejunkie 🍕 This 4-INGREDIENT COTTAGE CHEESE CRUST PIZZA will, in fact, change your life—or at least make you skip ordering pizza takeout for the foreseeable future! One of the reasons I love cooking so much is because I bought amazing, high performance appliances that make cooking more enjoyable. When I was remodeling my kitchen, I could have chosen any appliance brand since I needed new everything. But I bought ThermadorHome without any hesitation—my fridge, stove top, wine fridge, dishwasher and double oven are all Thermador. Cottage Cheese Crust Pizza⁣
1 3/4 cups cottage cheese (I used low fat Good Culture)⁣
1 3/4 cups gluten-free flour (or all purpose flour)⁣
2 tsp baking powder⁣
1 1/2 tb olive oil⁣
⁣
Toppings:⁣
3/4 cup pizza sauce⁣
1 cup shredded mozzarella cheese⁣
1/3 cup grated Parmesan cheese⁣
pepperoni⁣ slices
Crushed red pepper flakes⁣
⁣
Preheat oven to 450F. Blend cottage cheese until completely smooth, then transfer it to a medium bowl along with the flour and baking powder. Stir everything together with a spoon. At first it will be crumbly, but then ditch the spoon and work the dough with your hands, forming a ball. Next, line a large baking sheet with parchment paper. Sprinkle flour on top then add the dough ball. Place another piece of parchment paper on top and flatten out the dough into a 14 inch round using a rolling pin (you want this thin!). Remove the top piece of parchment paper. Brush lightly with olive oil (especially the edges), then bake for 10 minutes. Remove the pizza crust from the oven. Add all of your toppings—sauce, cheeses, and pepperoni. Bake for five more minutes, then broil for the last two minutes to get golden and crunchy on top. Remove from the oven, slice into pieces and enjoy!⁣
