PB&J MUFFINS 🥜 If you grew up eating the classic sandwich (ok so all of us) this recipe was made for you!! Same nostalgic combo, but upgraded with eatinscoops peanut protein powder. Fluffy, perfectly sweet, and each muffin packs about 7g protein — a great breakfast or snack prep the whole family will love! Ingredients (12-13 muffins): 
2 ripe bananas, mashed
2 eggs
1/2 c plain Greek yogurt
1/4 c honey
1 teaspoons vanilla extract
1/2 c eatinscoops original peanut protein powder
1 cup almond flour
1/2 c oat flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/4 c milk, if batter is too thick
1/4 c fruit preserves (strawberry, raspberry, or grape)
Optional drizzle: 2 tablespoons eatinscoops mixed with 3-4 tbsp water
 
Preheat oven to 350°F. Line a 12-cup muffin tin with liners or lightly grease a silicon baking mold.
In a large bowl mash 2 ripe bananas, mashed until smooth. Whisk in eggs, yogurt, honey, vanilla extract until well combined. Add all the dry ingredients, gently fold together until just combined and add in milk if batter is too thick. Don’t overmix! Fill each muffin cup 3/4 full, then add 1 tsp of your favorite jam or jelly on top of each muffin, then drag a knife or toothpick through the jam in a figure-8 to get the swirl. Bake for 18-22 until a toothpick comes out clean and the tops are set. Cool in the tin for 5 minutes then transfer to a wire rack. For an optional drizzle, mix together scoops and water until a thin consistency, then add on top. Serve warm or store for meal prep up to 4 days in the fridge!
