 Grandma’s Leche Flan

Ingredients:
1/2 Cup Sugar
3 Whole Eggs
2 Egg Yolks
1 Can Condensed Milk
290 ml Whole Milk
1 Tbsp Vanilla

Instructions:
1. Place the sugar in a dry pan and cook on medium heat until it melts and turns golden brown. DO NOT touch the sugar until it fully melts.
2. Place the caramel in an oven safe dish.
3. Mix the eggs, condensed milk, whole milk and vanilla in a bowl. Blend until it’s fully incorporated. Sift to remove the bubbles and impurities.
4. Place the oven safe dish in a deep roasting pan. Pour hot water into the pan until it reaches halfway up the sides of the dish. Bake in the preheated 325 F oven for 1 hour 15–1 hour 25 minutes (start checking at 1:15). The flan is done when the edges are set and the center still slightly jiggles.
5. Remove from oven and carefully lift molds from the water bath. Let cool to room temperature, then refrigerate at least 4 hours or preferably overnight to fully set.
6. To serve, run a thin knife around the edge, invert onto a plate, and let the caramel flow over the top.
