Cheesy Chicken Alfredo Garlic Bread

Ingredients

For the chicken

* 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
* 1 tsp garlic powder
* 1 tsp Italian seasoning
* 1 tsp kosher salt
* ½ tsp black pepper
* 1 tbsp avocado or olive oil

For the Alfredo sauce

* 1 tbsp butter
* 2 garlic cloves, minced
* 1½ cups heavy cream
* 1 cup freshly grated Parmesan
* ¼ tsp garlic salt, or to taste

For the garlic bread

* 8 slices frozen garlic Texas toast
* 1 cup shredded mozzarella, divided
* Fresh parsley, chopped

Instructions

1. Heat the oven to 400°F. Arrange the garlic toast on a baking sheet and bake for about 5 minutes, just until lightly crisp. Remove from the oven and gently press the centers down with the back of a spoon to create a small pocket.
2. Meanwhile, heat a drizzle of oil in a large skillet over medium-high heat. Add the chicken and season with the garlic powder, Italian seasoning, salt, and pepper. Cook until browned and cooked through, about 6–8 minutes. Transfer to a plate.
3. In the same skillet, melt the butter. Add the garlic and cook for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan and garlic salt until the sauce is smooth and creamy.
4. Return the chicken to the skillet and toss until every piece is coated in the Alfredo sauce.
5. Sprinkle a little mozzarella onto each slice of garlic toast. Spoon the creamy chicken mixture over the top, then finish with the remaining mozzarella.
6. Bake for another 8–10 minutes, or until the cheese is melted, bubbly, and lightly golden.
7. Sprinkle with fresh parsley and serve immediately.
