Did you ever have any grape tomatoes that were a little past their prime, you know… a bit shriveled and jot rust pretty?  Well we have a perfect solution on what to do with them! Oven roast them!
And we’re gonna go low and slow. 
Cut them in half lengthwise and toss in a bowl with some olive oil, salt and pepper and a couple cloves of chopped garlic. Lay them in a single layer cut side up on a parchment lined baking sheet and bake them in a 250F oven for 90 minutes. I actually went about 29 minutes more to get extra shriveled. 

The roasting intensifies the flavor and brings out there natural sweetness and depth of flavor.  These tomatoes can be popped in your mouth like a snack!  They are perfect in soup or on an antipasto platter, are great tossed in pasta, on a salad or stuffed in a sandwich.  Also perfect to add to an omelette! So versatile, easy to make and oh so delicious!

They ever last long in my House, but if I have extra, I like to store them in a jar in some olive oil and put in the fridge. 

** If you make these and store them dry in the fridge (no oil), they will last about 1 week in an airtight container or bag.  If you store them covered in in Olive Oil like I did here, they will last a couple of months as long as the tomatoes stay completely covered by the oil.
