Mayor Skip gave me some excellent fresh produce from his garden, including these beautiful eggplants. Time for a proper Sunday sandwich; fried eggplant, homemade pesto, tomatoes, arugula, fresh mozzarella, prosciutto di Parma, on Ellie’s homemade sourdough. PROPER!!
