When life gives you lemonade... make orzo pasta with lemon dressing. 🍋

This bright, refreshing side gets a citrusy twist from our No Sugar Added Lemonade and is packed with colorful veggies for the perfect addition to weeknight dinners, meal prep, or your next cookout. Save this recipe for later!

Dressing:
• 1/4 cup Uncle Matt's Organic No Sugar Added Lemonade
• 2 tbsp organic olive oil
• 1/4 tsp red pepper flakes
• 1/2 tsp black pepper
• Salt to taste

Pasta Salad:
• 1/2 lb dried chickpea orzo
• 1 bunch organic arugula, chopped
• 1 organic yellow bell pepper, chopped
• 2 organic celery stalks, chopped
• 1/2 cup organic pomegranate seeds

Directions
1. Cook the orzo according to package directions until al dente.
2. Whisk together all dressing ingredients and set aside.
3. Drain the pasta, toss with half the dressing, and let cool completely.
4. Stir in the bell pepper, celery, pomegranate seeds, and remaining dressing. Fold in the arugula, then chill until ready to serve.
