I can never just make plain ramen 🤷‍♀️ I always have to turn it into something extra. This creamy Thai Peanut Ramen with beef is such an easy 30-minute dinner, it’s delicious and perfect when you need something quick! 

Ingredients

• 2 packs (3.5 oz each) ramen noodles
• ½ lb beef, thinly sliced
• ½ tsp salt
• ¼ tsp black pepper
• 4 garlic cloves, minced
• 1 red bell pepper, thinly sliced
• 4 oz snow peas

Creamy Thai Peanut Broth
• 2 tbsp Thai red curry paste
• 1 (13.5 oz) can coconut milk
• 1½ cups water
• 1 tsp Better Than Bouillon chicken base
• ¼ cup creamy peanut butter
• 1 tbsp soy sauce
• Juice of ½ lime

For Serving
• 2 soft-boiled eggs
• Sliced green onions
• Chili oil, optional

Directions

1. Bring a small pot of water to a boil. Carefully lower in the eggs and cook for 6–7 minutes. Transfer immediately to an ice bath, then peel and set aside.
2. Heat a large skillet over medium-high heat. Add the thinly sliced beef, season with salt and black pepper, and cook for about 3 minutes or until browned and cooked through. Remove from the skillet and set aside.
3. Add the bell pepper and snow peas to the same skillet. Season with a small pinch of salt and cook for 3–4 minutes, just until slightly tender but still crisp. Remove and set aside.
4. Add the minced garlic to the skillet and sauté for about 30 seconds. Stir in the red curry paste and cook for another minute until fragrant.
5. Pour in the coconut milk and water, then add the chicken base, peanut butter, and soy sauce. Whisk everything together until smooth and bring to a gentle simmer.
6. Add the ramen noodles directly to the creamy peanut broth. Once they begin to soften, gently separate them and cook until tender and the broth has slightly thickened.
7. Stir in the fresh lime juice. Divide the creamy ramen between bowls and top with the beef, bell peppers, snow peas, and soft-boiled eggs. Finish with green onions and chili oil if you like a little heat.
