Mediterranean Yogurt-Marinated Chicken Thighs

This has become such a family favorite! The chicken is juicy and packed with flavor, and all those drippings cook right down into the potatoes and onions underneath. 😍

Chicken & Marinade
• 12 boneless, skinless chicken thighs
• 1½ cups plain Greek yogurt
• 2 tbsp tomato paste
• 1 tbsp garlic powder
• 1 tbsp dried oregano
• 1 tbsp paprika
• 2–3 tbsp red wine vinegar
• 2 tbsp olive oil
• Salt & pepper to taste

Potatoes & Onions
• 4–5 potatoes, cut into chunks
• 1 large onion, cut into chunks or wedges — use whatever kind you have
• About 2 tbsp olive oil
• About 1 tbsp red wine vinegar
• Garlic powder, paprika & oregano to taste
• Salt & pepper to taste

Directions
Pierce each chicken thigh several times with a fork. Mix all the marinade ingredients, add the chicken and coat really well. Cover and refrigerate for at least 2 hours or overnight.

Toss the potatoes and onions with the olive oil, red wine vinegar and seasonings and spread them in the bottom of the pan.

Stack the marinated chicken thighs onto the vertical skewer in a crisscross pattern over the potatoes and onions.

Loosely cover with foil and roast at 375°F for about 1 hour. Remove the foil and roast for another 20 minutes, or until browned and the chicken reaches 165°F.

Let it rest for about 10 minutes, then shave or thinly slice the chicken right off the skewer.

Serve it with warm pita, tzatziki, tomato-cucumber salad and feta. I’ll sometimes make orzo on the side too!

My kids LOVE this dinner, and I’ve already made it several times. The overnight marinade is amazing, but even a couple of hours gives the chicken so much flavor. ❤️
