These Hot Honey Cheesy Brioche Pull-Apart Bites might just be your new favorite crowd pleaser

Yield: 6 servings (8 × 10-inch baking dish)

Dough

- 225 ml warm water
- 1½ tsp instant yeast (4.5 g)
- 325 g bread flour (or all-purpose flour)
- 1 tsp salt (4 g)
- 20 ml olive oil

Filling

- Mozzarella cheese cubes

Hot Honey Garlic Butter

- 1 stick (113 g) unsalted butter, softened
- 2 garlic cloves, minced
- 1 tbsp Mike’s Hot Honey
- Fresh parsley, finely chopped

Topping

- Shredded mozzarella cheese
- Mike’s Hot Honey, for finishing

Instructions

1. In a bowl, combine the warm water and instant yeast. Let sit for a few minutes.
2. Add the flour and salt, then pour in the yeast mixture. Mix with a hand mixer fitted with dough hooks until a shaggy dough forms.
3. Add the olive oil and continue mixing until no dry flour remains.
4. Cover the bowl and let the dough rest for 45 minutes.
5. With damp hands, perform one stretch and fold. Cover and let the dough rest for 30 minutes.
6. Perform a second stretch and fold, then cover and let the dough rise in a warm place until doubled in size (about 1 hour, or longer depending on the room temperature).
7. Divide the dough into 6 equal pieces.
8. Place a cube of mozzarella in the center of each piece and seal well to form smooth balls.
9. Arrange the dough balls in an 8 × 10-inch baking dish, cover, and let rise in a warm place until doubled in size (about 1 hour). If needed, proof in a turned-off oven with a bowl of hot water.
10. Brush the tops with beaten egg.
11. Bake at 180°C (356°F) for 20 minutes.
12. Meanwhile, combine the softened butter, minced garlic, Mike’s Hot Honey, and chopped parsley until well combined.
13. Remove the bread from the oven and generously spread the Hot Honey Garlic Butter over the warm brioche.
14. Top with shredded mozzarella.
15. Return to the oven for 10–15 minutes, then broil for the final 2 minutes until the cheese is melted, bubbly, and golden brown.
16. Finish with an extra drizzle of Mike’s Hot Honey before serving.
