@kalejunkie 🥒 Mexican Inspired Roasted Elote Cucumber Salad—I am literally dreaming of this cucumber salad and if you want something refreshing and delicious, drop everything and make this. I’m using the Elote seasoning from Trader Joe’s but if you don’t have it, I’ve given you the substitution below! Macros: 15g P• 20g C • 5g F Be sure to FOLLOW me @kalejunkie for more easy, delicious, protein-forward recipes like this! Makes 4 servings Dressing: 1 cup cottage cheese (low fat @good_culture) 3 tb grated cotija cheese 1 lime, juiced 2 tsp Trader Joe’s Elote seasoning (or 1/2 tsp chili powder, 1/2 tsp cumin, 1/2 tsp smoked paprika, 1/2 tsp chipotle) 2 cloves garlic Salad: 4 persian cucumber, thinly sliced 1/3 cup cilantro, chopped 1/2 red onion, finely diced 1 1/2 cups frozen corn, thawed 1 tb Trader Joe’s Elote seasoning (or 1 tsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1 tsp chipotle) First, make the roasted corn. Spray a non-stick skillet with avocado oil or spray of choice over medium heat. When the pan is hot, add the corn and elote seasoning. Stir, cooking for 6-7 minutes until roasted and fragrant. Remove from heat. Next, chop the rest of the salad ingredients and add them to a large bowl along with the roasted corn. Finally, make the dressing. Add all ingredients to a small blender and blend until smooth. Taste and adjust seasonings as needed.
