kalejunkie FLOURLESS CHOCOLATE ZUCCHINI MUFFINS, a new easy recipe that satisfies any sweet tooth and gets you eating your veggies, giving you the most bang for your buck 😏. I love love love when zucchini is in season and will find a way to roast it on its own or add it to my baked goods. I promise you can’t taste it in the muffins, but the byproduct is a perfectly MOIST and fluffy muffin. I love grabbing one of these before a workout for a boost of energy and my kids love these for breakfast (only because they have no idea there is zucchini in there!). ⁣

Makes 9 large or 12 standard size muffins⁣
1 medium zucchini, grated and pressed dry⁣
1 large ripe banana, mashed into a paste⁣
1/2 cup almond butter or nut butter of choice⁣
1 large egg⁣
2 tablespoons maple syrup⁣
2 tablespoons ground flax seed⁣
1/4 cup cocoa powder 
2 teaspoons vanilla extract⁣
3/4 tsp baking soda⁣
3/4 cup chocolate chips⁣

Preheat your oven to 375F. Line your muffin tin with liners—either 9 or 12, depending on how large you’d like your muffins. Grate the zucchini and press the moisture out using a paper towel and set aside. Next, mash the banana into a paste. I like doing this on a plate vs in a bowl because it’s easier (life hack!). Transfer the mashed banana to a large bowl and add the almond butter, egg, maple syrup, ground flax seed, vanilla, and baking soda. Mix until smooth then add in the zucchini and most of the chocolate chips (reserving some for the top later). Mix the batter well then divide it between the muffin liners (9 or 12). Top with remaining chocolate chips. Bake for 28-30 minutes for larger muffins or 25-28 minutes for the standard muffins. They are done with a toothpick comes out clean. Remove from oven and allow to cool before eating. ENJOY! These will stay fresh in the fridge for up to 1 week or in the freezer for up to 3 months. ⁣#zucchini #zucchinirecipes #zucchinimuffins
