Our August Flight of the Month. 🎉👊🏽😍👏🏽😎

In honor of our 4-course Mezcal Vago dinner pairing that happened on the 10th with Chef José Avila and Dylan Sloan, co-founder of Mezcal Vago, this month our flight features Mezcal Vago.

Mezcal Vago and Palenque’s friendship goes back to the brand’s founding in 2013 by two Colorado locals. We have worked with Mezcal Vago to bring the spirit of Oaxaca to The Mile High City. The Tobala/Barril blend from Tio Rey, made specifically for Palenque, was distilled with ancestral clay pots, producing only 70 liters. Maestro Emigdio Jarquin from Miahutalan worked with the native Madre Cuishe agave, and also made a special Espadin “Pechuga” batch distilled with a mix of fruits and spices.
