This Chorizo and Shrimp Rice Bowl is a hearty and flavorful dish that’s perfect for a weeknight dinner or a special occasion. The combination of smoky chorizo and tender shrimp is a classic pairing, and the vegetables and rice make it a complete and satisfying meal. Enjoy!

Ingredients:
1/2 lb large shrimp, peeled and deveined
9oz Cacique Beef Chorizo
1 red bell pepper, diced
1 onion, diced
2 cloves garlic, minced
1 cup white rice
2 cups chicken broth
1 tbsp olive oil
Salt and pepper to taste
Thai Chili Pepper
Cilantro and lime wedges for serving
Cacique Crema Mexicana
Cacique Ranchero brand Queso Fresco

Instructions:
In a large skillet, heat the olive oil over medium heat. Add the Beef Chorizo and cook until browned about 3 minutes.
In the same skillet, add the diced onion, minced garlic and red bell pepper. Cook for about 7 minutes, stirring occasionally, until the vegetables are tender and lightly browned.
Add the rice to the skillet and stir to coat with the chorizo fat and vegetable mixture. Cook for 2 minutes until the rice is lightly toasted.
Pour the chicken broth into the skillet and bring to a boil, then reduce the heat to low and cover the skillet. Cook for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
Add the shrimp to the skillet and stir to combine. Cover the skillet and cook for an additional 6 minutes, or until the shrimp are pink and cooked through.
Adjust with more salt to taste.
Turn off heat and add cilantro and Thai Chili Peppers.
Serve the rice and shrimp mixture in bowls, topped with the Crema Mexicana and Ranchero brand Queso Fresco. Serve with lime wedges.
