This Lemon Blueberry Layer Cake is a feast for the eyes. #LuckyLeafPartner It is a simple & delicious cake that features two layers of lemon sponge cake nestled in between Lucky Leaf Premium Blueberry Pie Filling or Topping and creamy,  whipped topping. Edible flowers make this an elegant, yet attainable dessert for your summer BBQs, & cookouts.

We love using lucky_leaf_fruit_filling for our baked goods because  it’s pre-made and ready to use, saving lots of time. I also love how I don’t need a can opener thanks to their easy to open pull-top lids. Our family also appreciates that these are Non-GMO, gluten-free, contain No high-fructose corn syrup, artificial flavors, colors, or preservatives!

Here is what you’ll need to make one!
15.25 box Yellow Cake Mix
3.4 ounces lemon pudding mix 
4 large eggs
½ cup sour cream
1 cup club soda
8 ounces whipped topping
1 can Lucky Leaf Premium Blueberry Fruit Filling or Topping

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
In a large bowl, combine the cake mix, pudding mix, eggs, sour cream, and club soda. Beat on low speed for 30 seconds, then increase speed to medium and beat for 1 minute, or until well combined. Pour the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cakes to cool completely before assembling frosting. To assemble the cake, place one cake layer on a serving platter. Spread with a layer of blueberry filling, then top with a layer of whipped topping. Add the top layer. 
Add whipped topping and blueberry filling to the top; garnish with florals like violas. Serve immediately or chill for later.

As you can see, this cake is easy and looks mighty pretty! It is the perfect cake to celebrate the summer or Fourth of July! I can’t wait to bake up another! I think I’ll alternate between Lucky Leaf Premium Blueberry & Strawberry Fruit Filling or Topping to make it even more Patriotic.
