the easiest vegetarian summer sandwich for peak summer produce season 🥪🍆🌱

what I used:
-Grilled up local zucchini, eggplant & peppers
-sliced low moisture mozzarella 
-heirloom tomato 
( You can really grill and add whatever seasonal veggies you want! )
-sourdough bread from zingermansbakehouse 
-a quick homemade chimichurri sauce (parsley, chives, basil, garlic, olive oil pulsed in my kitchenaidusa food chopper 
-all cooked on my trusted lodgecastiron grill pan cuz I don’t mess with a shared apt grill #sandwich #vegetarian #veggiesandwich
