In this episode of Cooking for Wellness, we cover easy recipes and practical tips for building a balanced diet while taking GLP-1 medications. Chef Jeffrey Held is joined by Dr. Melanie Jay, obesity medicine researcher at NYU Langone Health, to share realistic strategies for healthy eating on GLP-1s 

Chef Jeffrey Held makes a Greek yogurt parfait and matcha chia pudding while Dr. Melanie Jay explains how to build balanced meals with fruits, vegetables, lean protein, whole grains, legumes, and healthy fats. You’ll also learn how to create healthier routines at home, choose satisfying snacks, and decide when lower-fat foods may be easier to tolerate early in your GLP-1 journey. 

Yogurt Parfait  

Makes 1 serving  
 
½ cup Greek yogurt  
6 raspberries  
6 blueberries  
1½ ounces blackberries  
½ cup homemade granola  
NYU Langone rooftop honey (optional) 



Directions  

Scoop the yogurt into your favorite bowl or glass and then garnish with the fruit and granola. Top with a little honey and serve.  

Chef’s Notes  

Chef Jeffrey used full-fat yogurt, but fat-free or 2 percent is fine.   
He also used NYU Langone rooftop honey, but you can use your favorite variety.  

The fruit choice is completely up to you. Berries are great, but peaches, plums, bananas, mangos, and kiwis are all excellent choices.  
If purchasing granola, look for lower-sugar options. If you are looking to reduce your added sugar intake, use your favorite toasted nuts or seeds instead of granola.  

Per serving (206 grams): 380 calories; 14 grams fat (2.5 grams saturated); 5 milligrams cholesterol; 55 milligrams sodium; 45 grams carbohydrates; 5.5 grams fiber; 22 grams sugar (0 grams added); 20 grams protein 

 

Matcha Chia Pudding  
Makes 1 quart  

3 tablespoons matcha powder   
12 ounces coconut milk    
16 ounces almond milk  
3 tablespoons maple syrup  
1 tablespoon agave  
1 tablespoon vanilla extract  
½ cup chia seeds  
Berries and unsweetened coconut flakes, for garnish  

  

Directions  

Scoop the matcha powder into a medium bowl. Whisk in the coconut and almond milks, then the maple syrup, agave, and vanilla. Whisk in chia seeds a little at a time. Refrigerate for 12 to 24 hours. Dividing evenly, top each serving with berries and coconut flakes.  

Store leftovers in the refrigerator for up to 3 days. Be sure to cover it tightly so it does not absorb other flavors and odors.  

Per serving (137 grams): 130 calories; 5 grams fat (1 gram saturated); 45 milligrams sodium; 18 grams carbohydrates; 6 grams fiber; 10 grams sugar (10 grams added); 4 grams protein  

 

Spiced Nuts, Energy Bites 
Makes about 8 servings  

1 tablespoon ground cinnamon   
1½ teaspoons ground cumin   
1/8 teaspoon cayenne pepper (optional)  
1/8 cup cold water  
1 teaspoon salt  
1½ teaspoons olive oil  
2 pounds mixed nuts (almonds, peanuts, cashews, and pecans)  

Directions  

Preheat oven to 300°F. Line 2 sheet pans with parchment paper and set aside.  

In a large bowl, combine all the ingredients and mix until well combined. Spread on the sheet pans and roast for 18 to 20 minutes. Remove from oven and, while nuts are still hot, stir and toss. Let cool slightly and serve.   

Store leftovers in an airtight container for 1 week.  

Per serving (113 grams): 690 calories; 65 grams fat (7 grams saturated); 0 milligrams cholesterol; 340 milligrams sodium; 20 grams carbohydrates; 11 grams fiber; 4 grams sugar; 19 grams protein
