Pastırma (or Bastirma) is an Anatolian air-dried beef with a cwust of fenugreek, garlic and paprika. Turks, Armenians and Greeks have all been making it (and arguing about it) for centuries. It’s also the predecessor of your favorite deli sandwich so let’s throw some respect on the name.
