No oven necessary for this lasagna recipe! Lasagna sheets layered with creamy whipped ricotta, burst cherry tomatoes, mozzarella, parm & basil 🍅🍝

Ingredients:

3 lasagna sheets (or more if you want more layers)
2 tbsp. extra virgin olive oil
2 pints cherry tomatoes
4 garlic cloves, thinly sliced
1 cup whole milk ricotta
1/2 cup mozzarella pearls 
1/2 cup Parmigiano Reggiano, finely grated
1/4 cup basil chiffonade
Salt to taste
