Local sugar makers have noticed this year’s sap being produced at a trickle with less sugar content. "Usually the sugar content stays around 2%. But, this year, it’s around 1%,” Smith said. “My guess is that the fluctuation of temperatures at the beginning of the season has something to do with it.”
